Description

Decadent cheesecake bars combining creamy cheesecake, peanut butter, and chocolate, perfect for any occasion.


Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • ½ cup sour cream
  • 1 cup Reese’s peanut butter cups, chopped
  • ½ cup semi-sweet chocolate chips
  • 2 tablespoons heavy cream or milk

Instructions

  1. Mix the chocolate cookie crumbs with melted butter until well combined. Press this mixture firmly into the bottom of a greased 9×9 inch baking pan. Pre-bake the crust at 350°F (175°C) for 8 minutes to set it.
  2. In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, blending well after each addition. Mix in vanilla extract, peanut butter, and sour cream until the batter is silky and uniform.
  3. Pour the peanut butter cheesecake filling over the pre-baked crust and spread evenly. Bake at 350°F (175°C) for 40 minutes or until the edges are set but the center still slightly jiggles.
  4. While the bars bake, melt the chocolate chips with heavy cream in a microwave-safe bowl in 20-second intervals, stirring between, until smooth. Remove from heat and fold in chopped Reese’s peanut butter cups.
  5. Once the cheesecake bars are out of the oven and cooled for 10 minutes, pour the chocolate-peanut butter topping evenly over the bars. Refrigerate for at least 30 minutes to firm up before slicing.

Notes

Ensure cream cheese is softened for a smooth filling. Don’t overbake; the center should remain slightly jiggly.
