- 1 ½ cups chocolate cookie crumbs
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup creamy peanut butter
- ½ cup sour cream
- 1 cup Reese’s peanut butter cups, chopped
- ½ cup semi-sweet chocolate chips
- 2 tablespoons heavy cream or milk
Instructions
- Mix the chocolate cookie crumbs with melted butter until well combined. Press this mixture firmly into the bottom of a greased 9×9 inch baking pan. Pre-bake the crust at 350°F (175°C) for 8 minutes to set it.
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, blending well after each addition. Mix in vanilla extract, peanut butter, and sour cream until the batter is silky and uniform.
- Pour the peanut butter cheesecake filling over the pre-baked crust and spread evenly. Bake at 350°F (175°C) for 40 minutes or until the edges are set but the center still slightly jiggles.
- While the bars bake, melt the chocolate chips with heavy cream in a microwave-safe bowl in 20-second intervals, stirring between, until smooth. Remove from heat and fold in chopped Reese’s peanut butter cups.
- Once the cheesecake bars are out of the oven and cooled for 10 minutes, pour the chocolate-peanut butter topping evenly over the bars. Refrigerate for at least 30 minutes to firm up before slicing.
Notes
Ensure cream cheese is softened for a smooth filling. Don’t overbake; the center should remain slightly jiggly.
