Description

Tangy and creamy Rhubarb Cream Cheese Bars that are easy to make and perfect for spring and summer gatherings.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 egg
  • 2 cups rhubarb, chopped
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. Mix together the flour, butter, sugar, and vanilla until crumbly. Press the mixture into the bottom of the prepared baking dish to form a crust.
  3. Bake the crust for 10-12 minutes or until lightly golden.
  4. Beat together the cream cheese and powdered sugar until smooth. Add the egg and mix until combined. Pour the cream cheese mixture over the crust.
  5. Combine the chopped rhubarb, granulated sugar, cornstarch, and lemon juice in a separate bowl. Mix well and spread over the cream cheese layer.
  6. Bake for an additional 25-30 minutes or until the rhubarb is tender.
  7. Allow to cool before cutting into bars and serving.

Notes

Best served chilled or at room temperature. Pairs well with whipped cream or vanilla ice cream.
