Description

Delightful pastries combining tart rhubarb with flaky puff pastry, perfect for breakfast or a sweet snack.


Ingredients

  • 1 sheet of puff pastry
  • 2 cups rhubarb, chopped
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine the chopped rhubarb, sugar, cornstarch, and vanilla extract. Cook over medium heat until the rhubarb is tender and the mixture thickens.
  3. Roll out the puff pastry on a floured surface and cut into rectangles.
  4. Place a spoonful of the rhubarb mixture on one half of each rectangle.
  5. Fold the pastry over and seal the edges with a fork.
  6. Brush the tops with egg wash.
  7. Bake for 15-20 minutes or until golden brown.
  8. Dust with powdered sugar before serving.
