Description

A comforting dish with tender beef, rich spices, and colorful vegetables, perfect for family gatherings or cozy nights.


Ingredients

  • 2 tablespoons vegetable oil
  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 medium onions, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons sweet paprika (preferably Hungarian)
  • 1 teaspoon smoked paprika
  • 1 teaspoon caraway seeds, crushed
  • 1 teaspoon dried thyme
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (adjust for spice preference)
  • 2 cups beef broth
  • 1 (14-ounce) can diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 2 medium carrots, sliced
  • 1 bell pepper (any color), diced
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Sour cream (for serving, optional)

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large Dutch oven over medium-high heat. Add the beef chuck and sear for about 5-7 minutes, turning until browned on all sides.
  2. Remove the beef and set aside. In the same pot, add the chopped onions and sauté for about 5 minutes until translucent.
  3. Add the garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Stir in the sweet paprika, smoked paprika, crushed caraway seeds, dried thyme, salt, black pepper, and cayenne pepper, and cook for about 30 seconds to 1 minute.
  5. Return the beef to the pot and add the beef broth, diced tomatoes, tomato paste, and Worcestershire sauce. Stir well to combine.
  6. Add the bay leaves, sliced carrots, and diced bell pepper, and bring to a gentle boil. Reduce the heat to low, cover, and let simmer for about 90 minutes.
  7. In the last 10 minutes, stir in the frozen peas. Remove bay leaves before serving.

Notes

Serve with crusty bread or over egg noodles or rice. Adding sour cream on top enhances flavors.
