Description

A simple and delicious dish featuring roasted asparagus and carrots that enhances their natural sweetness and flavor.


Ingredients

  • 1 bunch asparagus, woody ends trimmed
  • 4 large carrots, peeled and sliced into sticks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Optional: Grated Parmesan cheese, for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the asparagus, carrot sticks, olive oil, minced garlic, dried thyme, salt, and pepper in a large bowl. Toss everything until well coated.
  3. Spread the vegetables on a baking sheet in a single layer.
  4. Roast in the preheated oven for about 20-25 minutes, or until asparagus is tender and slightly crispy, and carrots are cooked through. Stir halfway through.
  5. If desired, sprinkle with grated Parmesan cheese before serving.

Notes

For easier prep, use pre-cut or pre-packaged vegetables if available. Experiment with different herbs and spices for added flavor. Make sure to cut the carrots to a uniform size for even cooking.
