- 1 bunch asparagus, woody ends trimmed
- 4 large carrots, peeled and sliced into sticks
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Optional: Grated Parmesan cheese, for serving
Instructions
- Preheat your oven to 425°F (220°C).
- Combine the asparagus, carrot sticks, olive oil, minced garlic, dried thyme, salt, and pepper in a large bowl. Toss everything until well coated.
- Spread the vegetables on a baking sheet in a single layer.
- Roast in the preheated oven for about 20-25 minutes, or until asparagus is tender and slightly crispy, and carrots are cooked through. Stir halfway through.
- If desired, sprinkle with grated Parmesan cheese before serving.
Notes
For easier prep, use pre-cut or pre-packaged vegetables if available. Experiment with different herbs and spices for added flavor. Make sure to cut the carrots to a uniform size for even cooking.
