Description

Ingredients

  • 2 medium Sweet potatoes
  • 2 tablespoons Honey
  • 100g Feta cheese
  • 2 tablespoons Fresh thyme
  • 2 tablespoons Olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into rounds and place them on a baking sheet.
  3. Drizzle with olive oil, and sprinkle with salt and pepper.
  4. Roast in the oven for 25-30 minutes or until crispy on the edges and soft in the center.
  5. Once roasted, drizzle with honey and sprinkle with crumbled feta and fresh thyme.
  6. Serve warm or at room temperature.

Notes

For extra flavor, add a pinch of cayenne pepper or paprika before roasting. Use fresh thyme for the best taste.
