- 2 medium Sweet potatoes
- 2 tablespoons Honey
- 100g Feta cheese
- 2 tablespoons Fresh thyme
- 2 tablespoons Olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into rounds and place them on a baking sheet.
- Drizzle with olive oil, and sprinkle with salt and pepper.
- Roast in the oven for 25-30 minutes or until crispy on the edges and soft in the center.
- Once roasted, drizzle with honey and sprinkle with crumbled feta and fresh thyme.
- Serve warm or at room temperature.
Notes
For extra flavor, add a pinch of cayenne pepper or paprika before roasting. Use fresh thyme for the best taste.
