Description

A delightful Middle Eastern dessert combining saffron and pistachios, perfect for gatherings.


Ingredients

Scale
  • 1 cup semolina
  • 1 cup yogurt
  • 1 cup sugar
  • 1/2 cup melted butter
  • 1 teaspoon baking powder
  • a pinch of saffron strands
  • 1/2 cup pistachios, chopped
  • For the syrup:
  • 1 cup water
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon rose water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Combine the semolina, yogurt, sugar, melted butter, baking powder, and saffron in a bowl. Mix well until smooth.
  3. Pour the batter into the greased baking dish and smooth the top for even baking.
  4. Bake for about 30-40 minutes or until the top is golden brown.
  5. Prepare the syrup by boiling the water and sugar together. When it thickens, add the lemon juice and rose water.
  6. Pour the syrup over the hot dessert when the basbousa is done baking.
  7. Garnish with chopped pistachios and let it cool before serving.

Notes

Serve at room temperature. A dollop of whipped cream or a scoop of ice cream pairs well.
