A delightful Middle Eastern dessert combining saffron and pistachios, perfect for gatherings.
Ingredients

- 1 cup semolina
- 1 cup yogurt
- 1 cup sugar
- 1/2 cup melted butter
- 1 teaspoon baking powder
- a pinch of saffron strands
- 1/2 cup pistachios, chopped
- For the syrup:
- 1 cup water
- 1 cup sugar
- 1 tablespoon lemon juice
- 1 tablespoon rose water
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- Combine the semolina, yogurt, sugar, melted butter, baking powder, and saffron in a bowl. Mix well until smooth.
- Pour the batter into the greased baking dish and smooth the top for even baking.
- Bake for about 30-40 minutes or until the top is golden brown.
- Prepare the syrup by boiling the water and sugar together. When it thickens, add the lemon juice and rose water.
- Pour the syrup over the hot dessert when the basbousa is done baking.
- Garnish with chopped pistachios and let it cool before serving.
Notes
Serve at room temperature. A dollop of whipped cream or a scoop of ice cream pairs well.
