- 1/2 cup hot sauce (like Frank’s RedHot)
- 1/4 cup unsalted butter (melted)
- 2 tbsp olive oil
- Salt (to taste)
- Black pepper (to taste)
- 2 cups cooked rice (white or brown)
- 1 cup shredded lettuce
- 1 cup cherry tomatoes (halved)
- 1/4 cup green onions (thinly sliced)
- Avocado (optional, sliced)
- 1/2 cup shredded cheddar cheese
- 1/4 cup ranch or blue cheese dressing
Instructions
- Cut the chicken breasts into bite-sized pieces to ensure even cooking throughout the dish.
- In a bowl, combine the hot sauce and melted butter until smooth and well combined.
- Pour olive oil into a skillet over medium heat until shimmering.
- Add the chicken pieces to the skillet, seasoning with salt and black pepper. Cook for about 5-7 minutes until golden and cooked through.
- Pour the hot sauce mixture over the cooked chicken, stirring gently to coat.
- In a bowl, create a base with the cooked rice.
- Add the buffalo chicken on top of the rice, stacking on shredded lettuce, halved cherry tomatoes, and sliced green onions.
- If desired, sprinkle on sliced avocado and shredded cheddar cheese, then drizzle with ranch or blue cheese dressing before serving.
Notes
Store leftovers in an airtight container for 3-4 days. Can be reheated or enjoyed cold.
