Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 2 cups pasta (like elbow macaroni or rotini)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the ground beef, breaking it up with a spoon, cooking until browned.
  3. Stir in the carrots and celery, cooking for another 5 minutes.
  4. Pour in the beef broth and diced tomatoes, bringing the mixture to a boil.
  5. Add the pasta and Italian seasoning, cooking until the pasta is tender, about 8-10 minutes.
  6. Season with salt and pepper to taste before serving.
