- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 2 cups pasta (like elbow macaroni or rotini)
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the ground beef, breaking it up with a spoon, cooking until browned.
- Stir in the carrots and celery, cooking for another 5 minutes.
- Pour in the beef broth and diced tomatoes, bringing the mixture to a boil.
- Add the pasta and Italian seasoning, cooking until the pasta is tender, about 8-10 minutes.
- Season with salt and pepper to taste before serving.
Notes
For extra flavor, sprinkle some grated cheese on top when serving. It pairs well with crusty bread.
