Description

Deliciously satisfying muffins packed with crumbled sausage, fresh spinach, and colorful bell peppers—perfect for breakfast or brunch.


Ingredients

  • 6 large eggs
  • 1 cup cooked sausage (crumbled)
  • 1 cup cheddar cheese (shredded)
  • 1/4 cup milk
  • 1/2 cup bell pepper (chopped)
  • 1 cup spinach (chopped)
  • Salt and pepper, to taste
  • Muffin tin

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs and milk until smooth and slightly frothy.
  3. Mix in the crumbled sausage, cheddar cheese, bell pepper, spinach, salt, and pepper.
  4. Prepare your muffin tin by greasing it with cooking spray or oil.
  5. Fill each muffin cup about 3/4 full with the egg mixture.
  6. Bake for 20-25 minutes, until the muffins are set and golden on top.
  7. Cool for a few minutes before removing them from the muffin tin.
