- 2 pounds potatoes (peeled and cut into chunks)
- 1 pound ground beef
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 2 cups frozen peas, carrots, and corn
- 4 tablespoons butter
- ¼ cup sour cream
- ½ cup beef broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F.
- Boil the potatoes until they are fork-tender, then drain.
- Mash the potatoes with butter, sour cream, salt, and pepper until smooth.
- Brown the ground beef with the diced onions and minced garlic in a skillet, then drain the excess fat.
- Add the frozen veggies to the skillet and cook for 5–7 minutes.
- Stir in some flour, then add the beef broth, tomato paste, Worcestershire sauce, rosemary, and thyme; let it simmer for 10 minutes.
- Spread the meat mixture in a greased baking dish and top it with the mashed potatoes.
- Bake for about 30 minutes, or until the top is golden brown.
Notes
For creamier mashed potatoes, add a splash of milk or cream during mashing. Use a mix of different ground meats for varied flavor.
