- 1 cup Graham Cracker Crumbs (or digestive biscuits)
- 2 tablespoons Sugar (brown sugar optional)
- 5 tablespoons Unsalted Butter (melted)
- 16 ounces Cream Cheese (softened)
- 3/4 cup Sugar (sugar alternative optional)
- 1 teaspoon Vanilla Extract (pure preferred)
- 3 large Eggs (room temperature)
- 1/2 cup Caramel Sauce (thick and pourable)
Instructions
- Preheat the oven to 325°F (163°C).
- Prepare the crust: In a medium bowl, mix the Graham cracker crumbs with sugar and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan.
- Make the filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar and continue to beat until well blended.
- Add the vanilla extract. Add the eggs one at a time, mixing well after each addition till just combined.
- Swirl in the caramel sauce into the filling.
- Bake the cheesecake mixture over the crust for about 50-60 minutes, or until the edges are set but the center is slightly jiggly.
- Cool the cheesecake slowly in the oven with the door ajar for about an hour, then refrigerate for at least 4 hours or overnight.
- Serve cold, optionally drizzled with extra caramel sauce.
Notes
Use softened cream cheese to ensure a smooth mixture. A water bath can help to minimize cracks during baking.
