Ingredients

- 200g digestive biscuits
- 100g unsalted butter, melted
- 300g white chocolate, chopped
- 400ml heavy cream
- 3 large eggs, separated
- 50g sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 180°C (350°F).
- Crush the digestive biscuits into fine crumbs using a food processor.
- Mix the crumbs with melted butter and press into the bottom of a tart pan. Bake for 10 minutes, then let it cool.
- Melt the white chocolate over a double boiler in a bowl.
- Whip the heavy cream in another bowl until soft peaks form.
- Whisk the egg yolks with sugar and vanilla in a third bowl until pale.
- Fold the melted chocolate into the egg yolk mixture, then fold in the whipped cream.
- Beat egg whites with a pinch of salt in a separate bowl until stiff peaks form, then fold into the mousse mixture.
- Pour the mousse into the cooled tart shell and refrigerate for at least 240 minutes.
- Serve chilled and enjoy!
