Description

A delightful dish combining tender chicken thighs with a rich and creamy peanut sauce, making it a comforting choice for dinner.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup peanut butter
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup coconut milk
  • 1 tablespoon sesame oil
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Chopped green onions and peanuts for garnish

Instructions

  1. Combine peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, coconut milk, sesame oil, and red pepper flakes in the slow cooker. Mix until smooth.
  2. Add the chicken thighs to the slow cooker and coat them with the sauce.
  3. Cover and cook on low for 360-480 minutes (6-8 hours) or high for 180-240 minutes (3-4 hours), until the chicken is tender and cooked through.
  4. Once done, shred the chicken in the sauce, then serve over rice or noodles.
  5. Garnish with chopped green onions and peanuts before serving.

Notes

For added flavor, sauté the garlic and ginger before adding them to the slow cooker. Adjust spiciness with red pepper flakes. Increase coconut milk for a creamier dish.
