Description

A rich and smoky roasted red pepper and garlic sauce that elevates any dish, perfect for pasta, dips, or grilled meats.


Ingredients

  • 2 large red bell peppers
  • 4 cloves garlic
  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Place the red bell peppers on a baking sheet and roast for 20-25 minutes, turning halfway through, until the skins are charred and blistered.
  3. Remove from the oven, cover with foil, and let them steam for about 10 minutes.
  4. Peel off the skins, core the peppers, and remove the seeds.
  5. In a blender, combine the roasted peppers, garlic, olive oil, balsamic vinegar, salt, and pepper. Blend until smooth.
  6. Taste and adjust seasoning if needed.
  7. Serve the sauce with cooked pasta, garnished with fresh basil if desired.

Notes

Make sure to turn the peppers while roasting for even char. Adjust the garlic amount based on your preference.
