Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • â…“ cup granulated sugar
  • â…“ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup mini chocolate chips
  • 2 cups mini marshmallows
  • ¼ cup chocolate sauce
  • Additional graham cracker crumbs for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl. Stir until the mixture resembles wet sand.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake the crust for 10 minutes and then set aside to cool.
  5. Beat cream cheese and sugar together until smooth and creamy.
  6. Add eggs, one at a time, mixing well after each addition.
  7. Stir in vanilla extract and sour cream until fully incorporated.
  8. Fold in the mini chocolate chips gently.
  9. Pour the cheesecake filling over the cooled crust, spreading it evenly.
  10. Bake in the preheated oven for 60 minutes, or until the center is set but slightly jiggly.
  11. Turn off the oven and leave the cheesecake inside for an additional 30 minutes to cool gradually.
  12. Remove the cheesecake from the oven and let it cool completely at room temperature.
  13. Preheat the broiler. Top the cheesecake with mini marshmallows.
  14. Broil for 1-2 minutes, watching closely until the marshmallows are golden brown.
  15. Drizzle with chocolate sauce and sprinkle with additional graham cracker crumbs.
  16. Refrigerate the cheesecake for at least 4 hours, preferably overnight.
  17. Serve chilled and enjoy!

Notes

Make sure cream cheese is at room temperature for a smooth filling. Watch marshmallows closely under the broiler to prevent burning.
