A rich and creamy dessert combining the classic flavors of s’mores in cheesecake form.

- 1 ½ cups graham cracker crumbs

- â…“ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- 1 cup mini chocolate chips
- 2 cups mini marshmallows
- ¼ cup chocolate sauce
- Additional graham cracker crumbs for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl. Stir until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes and then set aside to cool.
- Beat cream cheese and sugar together until smooth and creamy.
- Add eggs, one at a time, mixing well after each addition.
- Stir in vanilla extract and sour cream until fully incorporated.
- Fold in the mini chocolate chips gently.
- Pour the cheesecake filling over the cooled crust, spreading it evenly.
- Bake in the preheated oven for 60 minutes, or until the center is set but slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional 30 minutes to cool gradually.
- Remove the cheesecake from the oven and let it cool completely at room temperature.
- Preheat the broiler. Top the cheesecake with mini marshmallows.
- Broil for 1-2 minutes, watching closely until the marshmallows are golden brown.
- Drizzle with chocolate sauce and sprinkle with additional graham cracker crumbs.
- Refrigerate the cheesecake for at least 4 hours, preferably overnight.
- Serve chilled and enjoy!
Notes
Make sure cream cheese is at room temperature for a smooth filling. Watch marshmallows closely under the broiler to prevent burning.
