Description

Delightful and healthy breakfast bars made with ripe bananas, oats, and nut butter.


Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup chopped mixed fruit (e.g., blueberries, strawberries, or diced apples)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven and prepare the pan by lining a baking dish with parchment paper.
  2. Combine the mashed bananas, rolled oats, nut butter, honey (or maple syrup), cinnamon, and salt in a large bowl.
  3. Fold in the mixed fruit and nuts, if using.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 25-30 minutes or until the edges are golden and the center is set.
  6. Cool and cut into bars.

Notes

Store in an airtight container at room temperature for 2-3 days or in the refrigerator for a week. They can also be frozen for up to 3 months.
