  • ¾ cup (150 grams) granulated sugar
  • ¼ cup (50 grams) packed light brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (about 150 grams) fresh strawberries, diced small
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. Whisk together the dry ingredients: all-purpose flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the softened butter and both sugars using a mixer on medium speed until light and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract until the mixture is smooth and glossy.
  5. Gradually add the flour mixture to the wet ingredients. Mix on low speed or fold gently until just combined.
  6. Fold in the diced fresh strawberries, being careful not to mash them.
  7. Scoop the dough onto the prepared baking sheets using a cookie scoop or tablespoon, spacing the cookies about 2 inches apart.
  8. Optionally, sprinkle granulated or coarse sugar on top for a subtle crunch.
  9. Bake for 12-14 minutes, until the edges are lightly golden but the centers remain soft.
  10. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

Notes
