Description

A quick and easy microwave dessert featuring fluffy cake and sweet strawberries.


Ingredients

  • 2 tbsp butter (preferably unsalted)
  • 1/4 cup all-purpose flour
  • 3 tbsp sugar
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 2 strawberries (diced into 1/4-inch pieces)
  • 4 tbsp milk
  • 1 tsp vanilla extract
  • 1/8 tsp ground cinnamon

Instructions

  1. Dice the strawberries into small, even 1/4-inch pieces.
  2. Place the butter in a microwave-safe mug and microwave for 20-30 seconds until melted.
  3. Tilt the mug to coat the sides and bottom with melted butter.
  4. Combine the flour, sugar, baking powder, salt, and cinnamon in the mug.
  5. Add the milk and vanilla extract, folding everything together until just combined.
  6. Gently fold in the diced strawberries.
  7. Microwave on high for 90 seconds to 2 minutes, checking at the 90-second mark.
  8. Let the mug cool for 1 minute before eating.

Notes

Top with whipped cream, vanilla ice cream, or chocolate syrup if desired. Best eaten fresh.
