- 1 medium spaghetti squash
- 1 cup shredded cheese (e.g., mozzarella or cheddar)

- 1 cup heavy cream

- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the inside with olive oil and season with salt and pepper.
- Place the squash halves cut-side down on a baking sheet and roast in the preheated oven for about 30-40 minutes, or until the flesh is tender.
- Once cooked, scrape the flesh of the squash with a fork to create strands and place them in a mixing bowl.
- In the same bowl, add shredded cheese, Parmesan cheese, heavy cream, minced garlic, and mix well.
- Transfer the mixture into a greased baking dish and spread it evenly.
- Top with extra cheese if desired.
- Bake in the oven for an additional 15-20 minutes, or until the top is golden and bubbly.
- Garnish with fresh parsley before serving.
