Description

Ingredients

  • 1 medium spaghetti squash
  • 1 cup shredded cheese (e.g., mozzarella or cheddar)
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the inside with olive oil and season with salt and pepper.
  3. Place the squash halves cut-side down on a baking sheet and roast in the preheated oven for about 30-40 minutes, or until the flesh is tender.
  4. Once cooked, scrape the flesh of the squash with a fork to create strands and place them in a mixing bowl.
  5. In the same bowl, add shredded cheese, Parmesan cheese, heavy cream, minced garlic, and mix well.
  6. Transfer the mixture into a greased baking dish and spread it evenly.
  7. Top with extra cheese if desired.
  8. Bake in the oven for an additional 15-20 minutes, or until the top is golden and bubbly.
  9. Garnish with fresh parsley before serving.

Notes

For extra flavor, consider adding cooked bacon or sausage to the cheese mixture. Experiment with different types of cheese for a unique taste. To lower calories, use low-fat cream or plant-based alternatives.
