Description

Ingredients

  • 1/4 cup milk
  • 1/2 cup diced tomatoes
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Tortillas (for serving)
  • Avocado and salsa for topping (optional)

Instructions

  1. Whisk together the eggs and milk, and season with salt and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Add the diced onions and bell peppers. Cook until soft, about 3-4 minutes.
  4. Add the tomatoes and cook for another 2 minutes.
