- 12 oz buffalo sauce (mild)
- 1/4 tsp salt
- 1 cup uncooked rice
- 1 cup matchstick or shredded carrots
- 1 Tbsp butter
- 1/2 tsp salt
- 1 cup finely diced cucumber
- 12 pieces cherry tomatoes, halved
- 1/2 cup crumbled gorgonzola
Instructions
- Begin by cooking the rice according to the package instructions. While the rice is cooking, prepare the chicken. Cut the chicken breasts into bite-sized pieces.
- Heat the butter in a large skillet over medium heat, then add the chicken. Cook until the chicken is no longer pink, about 5-7 minutes.
- Pour the buffalo sauce over the cooked chicken. Stir to coat evenly and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
- Layer the rice in bowls, followed by the spicy buffalo chicken, shredded carrots, diced cucumber, cherry tomatoes, and crumbled gorgonzola on top.
Notes
For extra heat, consider using a hot buffalo sauce. You can make a double batch and freeze half for an easy meal later.
