A delightful and nutritious meal option combining cottage cheese, seasoned ground beef, and roasted sweet potatoes, perfect for a weeknight dinner.


Ingredients

  • 2 large sweet potatoes, diced into 1/2-inch cubes
  • Avocado oil spray
  • 3/4 tsp salt
  • 3/4 tsp paprika
  • 3/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 lb ground beef (80/20 ratio)
  • 1 tsp salt
  • 1.5 tsp paprika
  • 1.5 tsp chili powder
  • 1.5 tsp garlic powder
  • 1.5 tsp onion powder
  • 1/4 cup fresh cilantro, chopped
  • 1 large avocado, sliced into 1/4-inch thick wedges
  • 16 oz cottage cheese
  • Crushed red pepper
  • Hot honey
  • 1 tbsp fresh lime juice

Instructions

  1. Dice the sweet potatoes into uniform 1/2-inch cubes. Spread them in your air fryer basket and spray generously with avocado oil.
  2. Combine the salt, paprika, and garlic powder in a small bowl. Toss the potatoes with this seasoning mixture until evenly coated. Air fry at 400°F for 18 minutes, shaking the basket halfway through.
  3. Add the ground beef to a large skillet over medium-high heat. Cook for 5-7 minutes until browned. Let it sit undisturbed initially to develop good browning.
  4. Drain excess fat if necessary. Add salt, paprika, chili powder, garlic powder, and onion powder. Stir to coat the beef evenly and cook for another 30 seconds.
  5. Divide the cottage cheese into serving bowls. Top each bowl with the roasted sweet potatoes and seasoned ground beef.
  6. Add avocado slices on top. Drizzle hot honey over the beef and sprinkle with crushed red pepper. Finish with a squeeze of lime juice.

Notes

Let the sweet potatoes marinate in seasoning for extra flavor. For a lighter option, use lean ground beef or ground turkey. Customize toppings with black beans, corn, or shredded cheese.
