Ingredients

  • 6 ears of fresh corn on the cob, husked
  • 2 tablespoons melted butter
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon lime juice
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste
  • 1 lime cut into wedges

Instructions

  1. Start by husking the corn on the cob. Rinse it under cold water to remove any dirt and set it aside.
  2. Mix the mayonnaise, sour cream, Cajun seasoning, lime juice, Parmesan cheese, smoked paprika, and chopped parsley in a small bowl. Season with salt and pepper to taste.
  3. Preheat your grill to medium-high heat. Brush the corn with melted butter and place it on the grill.
  4. Cook for about 10-15 minutes, turning occasionally until the corn is tender and has grill marks.
  5. Remove the corn from the grill. Let it cool for a minute before slathering the creamy Cajun mixture over each ear of corn.
  6. Serve with lime wedges on the side for an extra citrusy zing.

Notes

For extra flavor, try marinating the corn in a little bit of the creamy mixture before grilling. Adjust Cajun seasoning to taste.
