- 6 ears of fresh corn on the cob, husked
- 2 tablespoons melted butter
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons Cajun seasoning
- 1 tablespoon lime juice
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon smoked paprika
- 1 tablespoon chopped fresh parsley
- Salt and black pepper to taste
- 1 lime cut into wedges
Instructions
- Start by husking the corn on the cob. Rinse it under cold water to remove any dirt and set it aside.
- Mix the mayonnaise, sour cream, Cajun seasoning, lime juice, Parmesan cheese, smoked paprika, and chopped parsley in a small bowl. Season with salt and pepper to taste.
- Preheat your grill to medium-high heat. Brush the corn with melted butter and place it on the grill.
- Cook for about 10-15 minutes, turning occasionally until the corn is tender and has grill marks.
- Remove the corn from the grill. Let it cool for a minute before slathering the creamy Cajun mixture over each ear of corn.
- Serve with lime wedges on the side for an extra citrusy zing.
Notes
For extra flavor, try marinating the corn in a little bit of the creamy mixture before grilling. Adjust Cajun seasoning to taste.
