Ingredients

- 4 large bell peppers (any color), chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1 tablespoon olive oil
- Bread slices (for grilled cheese)
- Cheese slices (like cheddar or mozzarella)
- Butter (for grilling)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, sautéing until translucent.
- Add the chopped bell peppers, smoked paprika, and cayenne pepper to the pot, and cook for about 5 minutes.
- Pour in the vegetable broth, bringing the mixture to a boil, then reduce the heat and simmer for 20 minutes.
- Blend the soup until smooth with an immersion blender or by transferring it to a blender in batches.
- Season the soup with salt and pepper to taste.
- Butter one side of each bread slice and grill with cheese in between until golden brown and melted.
- Serve the soup hot with slices of grilled cheese on the side.
Notes
Garnish the soup with fresh herbs or a dollop of sour cream for extra flavor. Leftovers can be stored for up to 3 days in the refrigerator or frozen for 2 months.
