Description

A delicious and hearty casserole combining beef, chiles, and cheese, perfect for family dinners or meal prep.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1 can (7 oz) diced green chiles or 34 roasted poblano or Anaheim chiles, sliced
  • 2 cups shredded Monterey Jack or Mexican blend cheese
  • 4 large eggs
  • 1 cup milk
  • ¼ cup flour (or almond flour for low-carb)
  • ½ tsp baking powder
  • Fresh cilantro, sliced jalapeños, and optional salsa for garnish (For serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef and diced onion in a skillet over medium heat until browned and soft.
  3. Drain any excess fat, then stir in garlic powder, cumin, salt, and pepper. Cook for another minute.
  4. Spread half of the beef mixture in a greased casserole dish, top with half of the chiles and 1 cup of cheese. Repeat layers.
  5. Whisk together eggs, milk, flour, and baking powder until smooth, then pour over the casserole.
  6. Bake for 30-35 minutes until set and lightly browned. Let cool before serving.

Notes

Best served warm with fresh cilantro and jalapeños.
