- 2 cups crushed graham crackers
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 packages (8 oz each) cream cheese, softened
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 3 cups fresh strawberries, sliced
- 1 cup whipped cream
- 1 cup strawberry puree
Instructions
- Preheat the oven to 325°F (160°C).
- Combine crushed graham crackers and melted butter in a bowl. Press this mixture into the bottom of a 9-inch springform pan.
- Beat the cream cheese and sugar together in a mixing bowl until smooth. Add the vanilla and sour cream, mixing until combined.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 60 minutes or until the center is set. Let the cheesecake cool.
- Top with strawberry puree and sliced strawberries once cooled.
- Refrigerate for at least 240 minutes (4 hours) before serving.
- Serve topped with whipped cream and enjoy!
Notes
Make sure your cream cheese is softened before mixing for a smooth filling. Adjust sugar to your taste.
