- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs

- 2 teaspoons baking powder

- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- Cream together the butter and sugar until fluffy, about 3-5 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and milk.
- Whisk together the flour, baking powder, and salt in another bowl.
- Add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped strawberries gently.
- Pour the batter into the prepared cupcake liners, filling them about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool before serving.
Notes
These cupcakes can be topped with powdered sugar or whipped cream. They pair wonderfully with vanilla ice cream.
