- 1 cup Unsalted Butter
- 1 cup Granulated Sugar
- 1 cup Powdered Sugar
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Almond Extract (Optional)
- 1 cup Strawberry Jam or Preserves
- 1 cup Sprinkles (Optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the flour, baking soda, baking powder, and salt in a bowl. Set it aside.
- Beat the unsalted butter and granulated sugar together until creamy in another mixing bowl.
- Add the eggs, vanilla extract, and almond extract to the butter mixture and mix well.
- Gradually add the dry ingredient mixture and combine until smooth.
- Take a small amount of dough and flatten it into a circle in your palm. Add a spoonful of strawberry jam in the center and cover it with another flattened piece of dough. Pinch the edges to seal.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let them cool on a wire rack.
- Top with powdered sugar icing and sprinkle with colorful sprinkles if desired.
Notes
For extra flavor, consider adding lemon zest to the dough. Chill the dough for 30 minutes before baking if it spreads too much.
