    • 1 cup heavy cream (chilled)
    • 1 teaspoon vanilla extract
  • Topping:
    • 2 cups fresh strawberries (sliced)
    • ¼ cup powdered sugar (for sweetness)
    • Whipped cream (for serving)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Beat the softened cream cheese until smooth.
  3. Gradually add the granulated sugar and vanilla extract, mixing until well combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Fold in the sour cream until the mixture is creamy and smooth.
  6. Pour the cheesecake mixture into a greased 9-inch springform pan.
  7. Bake for 60 minutes or until the center is set but slightly jiggly.
  8. Turn off the oven and let the cheesecake cool inside for 1 hour to prevent cracks.
  9. Whisk together flour, sugar, baking powder, and salt in a large bowl.
  10. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  11. Whip the heavy cream and vanilla extract in a separate bowl until soft peaks form.
  12. Fold the whipped cream into the dry ingredients until just combined.
  13. Spread the shortcake batter over the cooled cheesecake layer.
  14. Bake for an additional 30 minutes or until the shortcake is golden brown.
  15. Allow it to cool completely before adding the topping.
  16. Mix the sliced strawberries with powdered sugar and let them sit for 10 minutes to release their juices.
  17. Top the cooled shortcake with the strawberries and a generous dollop of whipped cream.
