Description

A comforting and hearty soup that brings the flavors of stuffed peppers into a warm bowl, perfect for chilly evenings.


Ingredients

  • 1 pound ground beef (or turkey)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, chopped (red and green)
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef or vegetable broth
  • 1 cup uncooked rice
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Brown the meat in a large pot over medium heat. Drain excess fat.
  2. Sauté the diced onion and minced garlic until onions are translucent.
  3. Add the chopped bell peppers and cook until softened.
  4. Mix in the diced tomatoes, broth, uncooked rice, Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until rice is cooked.
  6. Garnish with fresh parsley or basil before serving.

Notes

Can be adapted with different meats or vegetables. Store leftovers in an airtight container for up to 3 days.
