- 1 pound ground beef (or turkey)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 bell peppers, chopped (red and green)
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef or vegetable broth
- 1 cup uncooked rice
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Instructions
- Brown the meat in a large pot over medium heat. Drain excess fat.
- Sauté the diced onion and minced garlic until onions are translucent.
- Add the chopped bell peppers and cook until softened.
- Mix in the diced tomatoes, broth, uncooked rice, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, until rice is cooked.
- Garnish with fresh parsley or basil before serving.
Notes
