A delicious twist on the classic grilled cheese sandwich featuring sun-dried tomato pesto and creamy mozzarella.
Ingredients

- 2 slices of bread
- 2 tablespoons sun-dried tomato pesto
- 1 cup shredded mozzarella cheese
- 1 tablespoon butter
Instructions
- Spread the sun-dried tomato pesto on one side of each slice of bread.
- Layer mozzarella cheese on top of the pesto on one slice.
- Place the second slice of bread on top, pesto side down.
- Heat a skillet over medium heat and melt butter.
- Place the sandwich in the skillet and cook until golden brown on one side, about 2-3 minutes.
- Flip the sandwich and cook until the other side is golden and the cheese is melted, about 2-3 more minutes.
- Remove from heat, slice, and serve.
Notes
Serve hot with a bowl of tomato soup or a side salad for a complete meal. You can also sprinkle some extra herbs on top for added flavor.
