Description

A delicious twist on the classic grilled cheese sandwich featuring sun-dried tomato pesto and creamy mozzarella.


Ingredients

Scale
  • 2 slices of bread
  • 2 tablespoons sun-dried tomato pesto
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon butter

Instructions

  1. Spread the sun-dried tomato pesto on one side of each slice of bread.
  2. Layer mozzarella cheese on top of the pesto on one slice.
  3. Place the second slice of bread on top, pesto side down.
  4. Heat a skillet over medium heat and melt butter.
  5. Place the sandwich in the skillet and cook until golden brown on one side, about 2-3 minutes.
  6. Flip the sandwich and cook until the other side is golden and the cheese is melted, about 2-3 more minutes.
  7. Remove from heat, slice, and serve.

Notes

Serve hot with a bowl of tomato soup or a side salad for a complete meal. You can also sprinkle some extra herbs on top for added flavor.
