  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 1 cup chicken broth
  • 1 cup chopped pineapple
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Start by cooking the rice. In a pot, combine the jasmine rice, coconut milk, and chicken broth. Bring it to a boil, then reduce the heat, cover, and simmer for about 15-20 minutes until the rice is fluffy.
  2. While the rice cooks, heat olive oil in a skillet over medium heat. Season the chicken with salt, pepper, garlic powder, and ginger powder.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and fully cooked.
  4. Once the chicken is nearly cooked, add the chopped pineapple and soy sauce. Cook for an additional 2-3 minutes until the pineapple is warmed through.
  5. Serve the chicken alongside the coconut rice, garnished with fresh cilantro.

Notes

Use fresh pineapple for the best flavor. For added sweetness, consider marinating the chicken in soy sauce and honey before cooking.
