- 1 cup phyllo dough
- 1 cup ricotta cheese
- 1/2 cup feta cheese, crumbled
- 1/2 cup spinach, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- 1 egg, beaten
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Mix together ricotta, feta, spinach, sun-dried tomatoes, olives, olive oil, and beaten egg in a bowl. Season with salt and pepper.
- Layer several sheets of phyllo dough on a clean surface, brushing each layer with olive oil.
- Cut the layered phyllo into squares or rectangles.
- Place a spoonful of the filling in the center of each piece, fold the dough over to enclose the filling, and seal the edges.
- Arrange the bites on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until golden and flaky.
- Serve warm and enjoy!
