Description

A delightful and refreshing salad featuring vibrant vegetables, feta cheese, and a zesty Greek dressing, perfect for summer gatherings.


Ingredients

  • 16 oz rotini
  • 1 cucumber, peeled and sliced into 1/2-inch half-moons
  • 1 pint tomatoes, halved lengthwise
  • 1 bell pepper, diced
  • 2/3 cup olives
  • 1/2 cup feta cheese, crumbled
  • 1/3 cup red onion, minced
  • 1/4 cup fresh parsley, chopped
  • 1 cup Greek dressing
  • 1/4 cup red wine vinegar
  • 1/3 cup olive oil
  • 3/4 tsp garlic powder
  • 1 1/2 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Prepare all vegetables by peeling and slicing the cucumber, halving the tomatoes, dicing the bell pepper, and mincing the red onion.
  2. Chop the parsley and crumble the feta cheese.
  3. Bring a large pot of salted water to a boil and cook the rotini according to package directions until al dente.
  4. Drain the pasta and rinse thoroughly with cold water until cooled.
  5. Whisk together red wine vinegar, olive oil, garlic powder, and oregano in a small bowl, seasoning with salt and pepper.
  6. Combine the cooled pasta with all the prepared vegetables and feta in a large bowl.
  7. Pour the dressing over everything and toss gently to coat.
  8. Cover and refrigerate for at least 2 hours before serving.

Notes

For optimal flavor, serve chilled and feel free to add more dressing or additional ingredients like grilled chicken or chickpeas.
