- 2 ripe bananas
- 1 cup quick cook oats
- 1/2 cup chocolate chips or nuts (optional)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- Mash the ripe bananas until smooth.
- Stir in the quick cook oats, cinnamon, salt, and vanilla extract until well combined.
- Fold in chocolate chips or nuts if desired.
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool and enjoy your healthy oatmeal breakfast cookies!
Notes
Make sure the bananas are very ripe for the best sweetness. Adjust the amount of cinnamon according to your taste.
