- 1 cup polenta
- 1 cup almond flour
- 1 cup sugar
- 1/2 cup butter, softened
- 3 large eggs
- 1 cup orange juice
- Zest of 1 orange
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- Cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the orange juice and zest.
- Mix together the polenta, almond flour, baking powder, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture until well combined.
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before dusting with powdered sugar and serving.
Notes
Serve with whipped cream or vanilla ice cream. Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
