Description

A vibrant, hearty bowl filled with roasted sweet potatoes and spiced ground beef, topped with creamy guacamole and fresh pico de gallo.


Ingredients

  • 2 medium sweet potatoes, cubed
  • 1 pound ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup guacamole
  • 1 cup pico de gallo
  • Olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss sweet potato cubes with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 25-30 minutes until tender, turning halfway through.
  4. Cook ground beef in a skillet over medium heat, season with chili powder, cumin, salt, and pepper.
  5. Assemble bowls with the roasted sweet potatoes and spiced ground beef.
  6. Top with creamy guacamole and pico de gallo.
  7. Garnish with fresh cilantro and serve.

Notes

For easy peeling, microwave the sweet potatoes for 1-2 minutes before cubing. Canned black beans can be added for extra protein.
