- 2 medium sweet potatoes, cubed
- 1 pound ground beef
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup guacamole
- 1 cup pico de gallo
- Olive oil
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss sweet potato cubes with olive oil, salt, and pepper on a baking sheet.
- Roast for 25-30 minutes until tender, turning halfway through.
- Cook ground beef in a skillet over medium heat, season with chili powder, cumin, salt, and pepper.
- Assemble bowls with the roasted sweet potatoes and spiced ground beef.
- Top with creamy guacamole and pico de gallo.
- Garnish with fresh cilantro and serve.
Notes
For easy peeling, microwave the sweet potatoes for 1-2 minutes before cubing. Canned black beans can be added for extra protein.
