Description

A quick and hearty Taco Casserole combines bold taco flavors with comforting layers, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 ½ tbsp taco seasoning mix
  • ½ cup water
  • ½ cup salsa con queso
  • 3 8-inch tortillas (flour or corn)
  • 2 cups shredded cheese (Mexican blend or cheddar)
  • Sour cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat oil over medium heat and brown the ground beef until fully cooked.
  3. Stir in taco seasoning and water; simmer for 2-3 minutes before adding salsa con queso.
  4. Spray an 8-inch round baking tin with cooking spray.
  5. Layer one tortilla in the tin, followed by a third of the beef mixture and cheese. Repeat twice more, finishing with cheese on top.
  6. Bake for about 20 minutes or until cheese is melted and bubbly.
  7. Allow to cool slightly before serving with sour cream.
