Ingredients

Scale
  • 1 bag frozen hashbrowns
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned

Instructions

  1. Brown the ground beef or turkey in a skillet over medium heat until fully cooked. Drain excess fat.
  2. Combine the cooked meat, frozen hashbrowns, taco seasoning, black beans, corn, salsa, and half of the cheese in the crockpot. Mix well.
  3. Cook on low for 360 minutes or high for 240 minutes, until heated through and hashbrowns are tender.
  4. Sprinkle the remaining cheese on top in the last 30 minutes of cooking to melt.
  5. Serve hot, topped with optional sour cream, green onions, or cilantro.

Notes

For extra heat, add diced jalapeños or cayenne pepper. You can use turkey or meat alternatives for a healthier option.
