- 1 can of crushed pineapple, drained
- 1 box of yellow cake mix
- 3 large eggs
- 1/2 cup of unsweetened coconut flakes
- 1/2 cup of butter, melted
- 1 cup of brown sugar
- 1 teaspoon of vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- Mix the drained crushed pineapple, melted butter, eggs, and vanilla extract.
- Stir in the cake mix until just combined.
- Toss in the coconut flakes and half of the brown sugar.
- Pour the batter into the prepared baking dish and sprinkle the remaining brown sugar on top.
- Bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
- Allow to cool slightly before serving.
Notes
Serve with vanilla ice cream or whipped cream for added indulgence. Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for a week.
