Instructions
- Preheat the oven to 325°F (163°C).
- Mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottoms of lined muffin cups to create a crust.
- Beat cream cheese and sugar until smooth.
- Add vanilla and eggs, one at a time, mixing well after each addition.
- Blend in sour cream until fully incorporated.
- Pour the cheesecake mixture over the crusts in the muffin cups.
- Bake for 18-20 minutes, or until the edges are set but the center is slightly jiggly.
- Allow to cool in the pan, then refrigerate for at least 2 hours before serving.
