Description

Delightful bite-sized cheesecakes that are creamy, sweet, and perfect for parties.


Ingredients

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 4 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottoms of lined muffin cups to create a crust.
  4. Beat cream cheese and sugar until smooth.
  5. Add vanilla and eggs, one at a time, mixing well after each addition.
  6. Blend in sour cream until fully incorporated.
  7. Pour the cheesecake mixture over the crusts in the muffin cups.
  8. Bake for 18-20 minutes, or until the edges are set but the center is slightly jiggly.
  9. Allow to cool in the pan, then refrigerate for at least 2 hours before serving.

Serve chilled with toppings like fruit, chocolate sauce, or whipped cream. Store in an airtight container in the fridge for up to 5 days.
