- 2 cups white beans (canned or cooked)
- 1 onion, finely chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 4 cups chicken broth

- 1 bay leaf
- Salt and pepper to taste
- Crusty bread or salad (for serving)
Instructions
- Heat the olive oil over medium heat in a large pot.
- Season the chicken thighs with salt and pepper. Brown the chicken in the pot until golden on both sides, about 5-7 minutes.
- Remove the chicken and set it aside.
- Add the onion, carrots, and garlic to the pot. Sauté until soft, about 5 minutes.
- Stir in the white beans, chicken broth, thyme, and bay leaf.
- Return the chicken to the pot and bring it to a simmer.
- Cover and reduce the heat to low, cooking for 30-40 minutes until the chicken is tender.
- Serve hot with crusty bread or a light salad.
