Description

Ingredients

  • 4 chicken thighs
  • 2 cups white beans (canned or cooked)
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Crusty bread or salad (for serving)

Instructions

  1. Heat the olive oil over medium heat in a large pot.
  2. Season the chicken thighs with salt and pepper. Brown the chicken in the pot until golden on both sides, about 5-7 minutes.
  3. Remove the chicken and set it aside.
  4. Add the onion, carrots, and garlic to the pot. Sauté until soft, about 5 minutes.
  5. Stir in the white beans, chicken broth, thyme, and bay leaf.
  6. Return the chicken to the pot and bring it to a simmer.
  7. Cover and reduce the heat to low, cooking for 30-40 minutes until the chicken is tender.
  8. Serve hot with crusty bread or a light salad.
