  • 1 cup Heavy Cream (or Coconut Cream; Use dairy-free cream or non-dairy milk for a vegan option.)
  • 1/2 cup Parmesan Cheese (Substitute with nutritional yeast for a dairy-free option.)
  • 1 cup Chicken Stock (Substitute with vegetable broth for a vegetarian version.)
  • 1 cup Bell Peppers (Any variety; can substitute with zucchini or spinach.)
  • 1 cup Onions
  • 3 cloves Garlic (Fresh garlic preferred.)
  • 1 teaspoon Kosher Salt (Adjust to taste.)

Instructions

  1. Begin by cooking the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the chopped onions and cook until they are soft.
  4. Stir in the minced garlic and bell peppers. Cook for a few minutes until the peppers are tender.
  5. Add the chicken breast to the skillet and sprinkle jerk seasoning over it. Cook until the chicken is browned and cooked through.
  6. Pour in the chicken stock and bring to a gentle simmer.
  7. Stir in the heavy cream and Parmesan cheese, mixing well to create a creamy sauce.
  8. Add the cooked pasta to the skillet, stirring to combine everything evenly. Cook for another 2-3 minutes until heated through.
  9. Taste and add salt if needed.

Notes

Make sure to season your chicken well with jerk seasoning for the best flavor. For a spicier dish, add more jerk seasoning or some chopped cayenne pepper. Feel free to swap out vegetables based on what you have available.
