Rich and fudgy brownies with three layers of mint frosting and chocolate ganache, topped with crushed Oreos.

- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup mint frosting (store-bought or homemade)
- 1 cup chocolate ganache (made from heavy cream and chocolate)
- 1 cup crushed Oreo cookies
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, melt the butter and stir in the sugar until combined.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In another bowl, mix together flour, cocoa powder, and salt. Gradually add dry ingredients to the wet mixture until fully incorporated.
- Pour the brownie batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick comes out with a few moist crumbs.
- Allow brownies to cool completely in the pan.
- Spread a layer of mint frosting evenly over the cooled brownies.
- Prepare the chocolate ganache by heating cream until simmering, then pouring it over chopped chocolate; stir until smooth.
- Pour ganache over the mint frosting layer and sprinkle with crushed Oreos.
- Chill until set, then cut into squares and serve.
Notes
Serve with vanilla ice cream or whipped cream for extra indulgence. Store in an airtight container for up to 3 days at room temperature, or refrigerate for up to a week.
