- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup crushed pineapple, drained
- 1/2 cup coconut cream
- 1/2 cup shredded coconut
Instructions
- Preheat the oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese with 1 cup sugar and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in crushed pineapple, coconut cream, and shredded coconut. Pour cheesecake mixture over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set and the edges are lightly browned.
- Remove from the oven and let cool for at least 1 hour before refrigerating for at least 4 hours.
- Serve chilled and enjoy your tropical dessert!
Notes
For enhanced flavor, garnish with extra shredded coconut or fresh pineapple slices. A dollop of whipped cream can also elevate the presentation.
