- 4 chicken thighs
- 2 carrots, diced
- 2 stalks celery, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1/2 cup white wine (optional)
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 2 cups chopped kale or spinach
- Salt to taste
- Fresh parsley for garnish
Instructions
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- Layer the diced carrots, celery, onion, and garlic in the base of the slow cooker.
- Lay the seasoned chicken thighs on top of the vegetable mix.
- Pour the can of diced tomatoes and their juice over the chicken.
- Add chicken broth and white wine (if using) to the slow cooker.
- Sprinkle dried oregano, thyme, and black pepper over the top.
- Gently stir the components to ensure even distribution of spices.
- Cover the slow cooker and set it to low for 360 minutes (6 hours) or high for 240 minutes (4 hours).
- Add chopped kale or spinach during the last 30 minutes of cooking.
- Remove the chicken once cooked, shred it using two forks, and return it to the stew.
- Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
Notes
For extra flavor, marinate the chicken thighs in olive oil, garlic, and herbs before cooking. Feel free to add other vegetables like potatoes or bell peppers.
