Colorful and decadent ube brownies made with purple yam for a unique twist on a classic dessert.

- 1 cup ube puree (purple yam)
- 1 cup sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
- In a large mixing bowl, combine the ube puree, sugar, and melted butter.
- Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, folding until just combined.
- If desired, fold in the chocolate chips.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow it to cool in the pan before slicing into squares. Enjoy your delicious ube brownies!
Notes
Serve warm or at room temperature, optionally topped with vanilla ice cream or whipped cream. Store in an airtight container for up to 3 days or refrigerate for a week.
