Description

A hearty stew combining savory chicken, creamy peanut butter, and nutritious vegetables, perfect for cozy nights.


Ingredients

  • 2 lbs Chicken, bone-in thighs or breasts
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 large Sweet Potatoes, cubed
  • 1 can Diced Tomatoes, 14 oz
  • 1 can Coconut Milk, 15 oz
  • 1 cup Peanut Butter, preferably natural
  • 4 cups Chicken Broth
  • 1 cup Spinach or Kale, chopped
  • 1 tablespoon Vegetable Oil
  • 2 teaspoons Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Cayenne Pepper
  • Salt, to taste
  • Pepper, to taste
  • Fresh Cilantro, for garnish (optional)
  • Rice or Crusty Bread, for serving

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  4. Add the chicken pieces and brown them on all sides.
  5. Mix in the sweet potatoes, diced tomatoes, coconut milk, peanut butter, and chicken broth.
  6. Season with cumin, paprika, cayenne pepper, salt, and pepper.
  7. Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the chicken is cooked through and tender.
  8. Stir in the chopped spinach or kale and cook for an additional 5 minutes.
  9. Serve hot, garnished with fresh cilantro, alongside rice or crusty bread.

Notes

For the best flavor, allow the stew to sit for a while after cooking. Adjust pepper according to your heat preference. Use boneless chicken for quicker cooking if short on time.
