- 1 lb chicken breast, diced
- 1 tablespoon Cajun seasoning
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup bell pepper, chopped
- 1 cup onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil over medium heat in a large pot.
- Add onion and bell pepper; sauté until softened.
- Add diced chicken, Cajun seasoning, salt, and pepper; cook until chicken is browned.
- Stir in the orzo and chicken broth; bring to a boil.
- Reduce heat, cover, and simmer for about 10 minutes or until orzo is cooked.
- Stir in heavy cream and Parmesan cheese until well combined and creamy.
- Garnish with fresh parsley and serve hot.
Notes
For an extra kick, add more Cajun seasoning or some red pepper flakes. Feel free to mix in other vegetables like spinach or mushrooms for added nutrients.
