Ingredients

  • 1 lb chicken breast, diced
  • 1 tablespoon Cajun seasoning
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup bell pepper, chopped
  • 1 cup onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Add onion and bell pepper; sauté until softened.
  3. Add diced chicken, Cajun seasoning, salt, and pepper; cook until chicken is browned.
  4. Stir in the orzo and chicken broth; bring to a boil.

  6. Stir in heavy cream and Parmesan cheese until well combined and creamy.

Notes
